Baked a carrot cake today, in a bid to revive memories of a frosty afternoon in Ottawa.
Ottawa happened because it was FREEZING. We (erroneously) believed that Ottawa would be warmer than Montreal because.. nothing can beat Montreal... right? So we garbed ourselves in warm autumn clothing, and didn't bring gloves. Because it really doesn't get worse than Montreal.
Or so we believed.
That day was the first time any of us experienced 0 Degrees in N.America. 0 degrees without gloves...really isn't funny. I think the only person who was actually prepared for the cold was.....the human Polar Bear down there.

Anyway, we parted ways with the Polar Bear and his bevy of women, because they were heading somewhere educational, and it was just...frosty, and I really just wanted to go shopping before anything else. But Xy was wearing...quite little that day, so we had no choice but to pop into the first cafe we saw to warm up. Fortunately, it was in there that we discovered the most delectable carrot cake. It was hearty (thanks lace), spicy, and not too sweet. I've never really enjoyed carrot cake (the idea of it is as appealing as brocolli cake), but this one really took the cake! And it was there that we had a conversation about whether it was possible to have a taste AND healthy dessert.
Since then, I haven't actually encountered a carrot cake as delectable as that one. Maybe it's the weather.... but the frosting here is usually too rich, or the cake too monotonous in flavour. Bleaugh I don't even like cream cheese frosting > : (
Anyway, friends have been telling me that their carrot cakes end up like..carrot kuehs. Well the one I tried appeared to be okayyyy..... A little on the moist side, but still okay! Here's the recipe. It's vegan. (and therefore healthy, right?)Bake it, eat it, and feel like you're now eligible to eat whatever you want, whenever you want this week. Just be careful with the frosting. It contains raw eggs white.
Yeah no photos because.... I messed the frosting up. Hahaha. It was a messy affair. I slapped on whatever I could and shoved it into the freezer in the hopes that it'd firm up.
